This recipe for fried potatoes with onions and parsley is inspired from an Indian recipe.
I left out the spices and substituted ghee or oil with butter. What's a good fried potato dish without a bit (or a bit too much) of butter.
The onions add sweetness to this dish, but feel free to leave it out. You can also substitute the parsley with any other herb.However, I do not recommend rosemary.
What I really like about this dish is that it is a perfect side to any other dish and that it is also a comfort food. This dish pairs beautifully with meats and vegetarian dishes alike. You can try your own spin on it by switching a few seasonings and it would still be delicious. Potatoes are super easy to cook with and a filling source of carbs.
The recipe calls for 40 minutes of prep time and this includes the time it takes for boiling the potatoes.
I highly recommend making this with Cucumber yoghurt dip and the Crumb fried chicken.
